This year I am on a journey to live healthier, work smarter and find balance. One way I am learning to be healthier and find more balance is to cook my own meals instead of eating out or eating unhealthy fast foods. I am however, not the most experienced home chef.
I love to eat a good meal and even though I can cook, sometimes I just don’t have time to put together a nice meal for myself. I may decide to try a new recipe but not have the ingredients I need to make the meal or the time to prep and put everything together. Running two businesses, family & household responsibilities and volunteer work keeps me busy and on the go constantly. I also hate going to the grocery store. I usually
ask make my mom to go with me when I do finally break down and go.

One meal that I really enjoyed was a Beef & Broccoli Rabe Tostada with Arugula. This is probably not something I would have ever tried or thought to make on my own. It included ground beef, onions, broccoli rabe, sun-dried tomatoes, arugula. garlic and walnuts served on top of a crispy tortilla. This was a meal for 2 people but there was more than enough for four normal servings/portions. I also had enough arugula left over to make 2 salads. The beef was very high quality and the sun-dried tomatoes were good enough to eat by themselves with a little parmesan cheese sprinkled on top. The instructions were easy to follow and it only took me about thirty minutes to make the recipe.
My favorite gourmet meal from my first box was the Turkey Polpette with Basil Tomato Sauce. It was to die for! This one was one of the meals for 4, but there was easily enough for 8 healthy portions/servings. I ate leftovers from this meal for several days in a row. Each portion had only 435 calories and 11 grams of fat.
This was the first time I had ever made “meatballs” on the stove top. I slightly overcooked them because I was afraid the inside of the meatball would not get cooked, however they still tasted great. (Don’t judge me, I’m still a home chef in training remember.) I loved how creamy the sauce was and how the flavors all complimented each other.
I absolutely love how HelloFresh makes me feel like a gourmet chef at home! It saves me so much time and the food tastes great. I am able to choose which meals I want to receive in each shipment so I can make sure to choose the healthier, lower fat ones to help me stick with my weight loss plan. I think each of the meals has very generous portions so a box of 3 meals for 2 easily makes 10-12 meals for me. I also like that I can choose to get the meals each week or suspend my subscription for a week or two. This is great for the times I am out of town on business or family vacations.
It is so much fun trying out new recipes and realizing that cooking delicious, gourmet meals does not have to be difficult, time consuming or expensive. I have some really awesome stainless steel cookware from Tupperware that I am finally able to use for more than just heating soup or browning hamburger meat! 🙂
